Ingredients
300g / 10 oz bacon , diced (or ham)
6 large eggs
1 1/4 cups milk (full cream or low fat)
1/4 tsp salt, black pepper
7 cups (packed) any plain bread (I use baguettes) , cut into 2 cm / 1 inch cubes (preferably slightly stale)
2 cups cheese, shredded (200g, cheddar, tasty, monteray jack, pepper jack, swiss, gruyere – not mozz, too plain)
Method
1. Cook all but 2 tbsp bacon until golden.
2. Whisk eggs, milk, salt and pepper. Add bread and mix so it’s all coated. Stir through cooked bacon and about 3/4 of the cheese, leave for 30 min so the bread gets totally soaked in the egg.
3. Transfer into a well greased 20cm/8” springform pan*. Top with reserved cheese and uncooked bacon, cover with foil.
4. Bake 25 min at 180C/350F, remove foil then bake a further 15 to 20 min until the top is golden and a skewer inserted into the centre comes out clean, no raw egg. Slice and serve!
